Festive Shrimp Chowder

3 medium onions, thin sliced
1/4 cup butter or margarine
1 cup boiling water
5 medium potatoes, peeled and cubed
1 1/2 tsp. salt
1/4 tsp. pepper
5 cups milk
1 1/2 cup cheddar cheese, grated
1 1/2 lbs. deveined, shelled raw shrimp
2 tbsp. fresh parsley leaves, snipped

In large, heavy saucepan or dutch-oven sauté onion in butter or margarine until tender. Add boiling water, potatoes, salt and pepper. Cover and simmer for approximately 20 minutes until potatoes are tender. Do not drain liquid. Slowly heat milk and cheese together, until cheese is melted. Add shrimp to potato mixture. Cook 3 minutes until shrimp turns pink. Add milk and cheese; heat slow on low. When heated through sprinkle with parley to serve.
