large head lettuce
1 3-ounce pkg. cream cheese
2 tbsp. crumbled blue cheese
2 tbsp. grated raw carrot
2 tbsp. minced green pepper
2 tbsp. diced fresh tomato, drained
1 tsp. chopped parsley
1/2 tsp. salt
1/2 tsp. pepper
3 generous tbsp. mayonnaise
Wash
lettuce well and remove core from heart to top. Blend
remaining ingredients together and pack firmly into cavity.
Wrap lettuce in a clean, damp cloth and chill several
hours. to serve, slice the head crosswise so that each
portion has a cheese center. Place slice on bed of crisp
green watercress. Garnish each serving with a radish rose.
Serves 6.
