Hot Oriental Chicken Salad

4 slices bacon, cut up
1 cup chicken stock
2 cups chicken, cooked and cubed
2 1/2 tbsp. vinegar
1 1/2 tbsp. honey

Cook bacon until crisp. In a small saucepan, combine 3 tbsp. bacon grease, bacon and remaining sauce ingredients. Cook over medium-low heat. Reserve remaining grease.

Fried Rice

2 1/2 cups cooked brown rice
2 eggs, lightly beaten
4 green onions

Heat remaining bacon grease in frying pan. Combine rice, onions and eggs. Fry rice in hot grease until crisp and golden on both sides. Thoroughly mix rice and chicken sauce in serving bowl. Garnish with quartered cherry tomatoes if desired.
