10-ounce package frozen chopped broccoli, thawed
2 whole large chicken breasts, skinned, boned and cut
in half
2 tbsp. butter or margarine
1/2 pound milt cheddar cheese, shredded
1/2 cup beer
2 tsp. sliced almonds
Pat
broccoli dry with paper towels,
and arrange it in an 8-inch by 12-inch baking dish.
Pound each piece of chicken until 1/4-inch thick. Melt
butter in frying pan, and cook chicken until tender
and browned on both sides, about 10 minutes. Arrange
chicken over broccoli; sprinkle with almonds. Bake at
350 degrees for 10-15 minutes or, until heated through.
