10-oz. package frozen chopped spinach
1 box lasagne noodles
2 cups grated mozzarella cheese
1 egg beaten
1 tbsp. blended salt, pepper, parsley, onion and garlic
powder
Homemade Italian cooking sauce or 1
32-oz. Italian cooking sauce
Cook
spinach, drain completely, pressing out excess moisture.
Set aside in a large bowl. Cook lasagne noodles. While
noodles cook, preheat oven to 350 degrees and prepare
cheese filling. In blender, or in medium sized bowl with
mixer at high spread, process cottage cheese, 1 cup mozzarella,
egg and the seasoning until mixture is smooth. Add to
spinach and stir until combined thoroughly. Layer half
the noodles in a 9-inch by 13-inch baking pan, pour on
filling, spreading evenly to sides of pan. Place another
layer of noodles on top of filling and top with first
the cooking sauce then the remaining cup of mozzarella.
Bake for 40 minutes.
