15-ounce
can whole tomatoes
3 8-ounce cans tomato sauce
4 1/2 cups water
3/4 cup green paper, chopped
1/2 cup celery, diced
1/4 cup red wine
1 medium onion, diced
2 tbsp. margarine
1/2 pound fresh mushrooms, sliced
2 cloves garlic
2 packages spaghetti seasoning mix
1 1/2 pounds lean hamburger
Brown
hamburger in skillet with small amount of oil. Drain.
Add all ingredients to a large Dutch oven and simmer for
30 minutes. Sauce will be thin. Set aside.
Filling:
24 ounces, 2 pkgs., manicotti noodles
2 pounds ricotta cheese
8 ounces mozzarella cheese, grated
1/2 cup cheddar cheese, grated
1/3 cup parmesan cheese
2 tbsp. romano cheese
1/4 cup onion
1 tbsp. parsley flakes
2 eggs, beaten
salt and pepper to taste
In
a large bowl mix all ingredients together. Stuff uncooked
manicotti noodles with filling. (A pastry tube works well).
Butter 2 large oblong 13-inch by 9-inch dish. Pour a little
sauce in bottom of dishes. Place filled manicotti one
layer think in dishes. Pour remaining sauce cover. Cover
with foil and bake at 350 degrees for 45 minutes or, until
soft. For microwave, cover with plastic wrap and cook
at high for 23 minutes or, until tender.
