BEVERAGES
Hot Buttered Rum
1 lb. butter
1 lb. brown sugar
1 quart vanilla ice cream
Mix above thoroughly. Place in container in freezer. To serve,
place one tbsp. mix in a heat-proof cup or mug with on tbsp. Run, Bourbon, or
Brandy and 6 oz. boiling water. Adjust batter amount to size of cup or mug.
Top with whipped cream if designed. Garnish with nutmeg or shaved chocolate.
Percolated Punch
This is a non-alcholic punch, perfect on a cold evening.
2 cups cranberry juice
2 1/2 cups apple juice or unsweetened pineapple juice
1/2 cup water
1/3 cup brown sugar
1 1/2 tsp. whole cloves
1 1/2 tsp. whole allspice
3 sticks cinnamon, broken into pieces
Place liquids in percolator. Place sugar and spices in basket of percolator.
Percolate 10-12 minutes.
SNACKS
Cheeseball
For easy entertaining make cheese ball up to a month ahead of time and freeze
1 8-oz. cream cheese
3 jars processed cheese spreads (bacon, sharp cheddar, Old English)
chopped nuts
Blend all cheeses well in mixer. Chill until it is possible to roll mixture into 1-2 large balls and roll in nuts. These will keep several days in refrigerator or a month in the freezer. Be sure to wrap well. Serve with crackers.
Cream Cheese Christmas Tree
Chopped parsley trims this easy holiday treat!
1 pkg. 8 oz. cream cheese, softened
1/2 cup crumbled blue cheese (2 oz.)
1/8 tsp. curry powder
1/4 cup finely chopped parsley
pimiento (for star)
In a small bowl, thoroughly blend cream cheese, blue cheese and curry powder.
Chill until firm enough to handle. Turn out onto a sheet of waxed paper or foil
and mold into a 5" cone. Cut a piece of waxed paper or foil 1" wind
and wrap around tree in a spiral fashion. This can be made up to this point
2 days ahead of serving if it is thoroughly covered with plastic wrap. Roll
tree in chopped parsley. Chill again until firm. When ready to serve, gently
peel off strips of foil. Decorate with tiny pimiento stars.
Orange Snow Balls
Makes about 40 cookies
1 pkg. shortbread cookies, crushed
1 cup flaked coconut
2/3 cup sifted powdered sugar
1/2 cup thawed, frozen orange juice concentrate (or lemonade concentrate for
lemon snowballs)
Sifted powdered sugar for coating
Mix cookie crumbs, coconut and 2/3 C. powdered sugar in a medium sized bowl. Stir in orange or lemon juice concentrate until well blended. Roll mixture a teaspoon at a time into balls. Roll each ball in powdered sugar, coating generously.
