Best Creamed Tuna

1 cup shredded cheese, any kind
2 tbsp. chopped onion
3 tbsp. margarine
3 tbsp. all-purpose flour
1 1/4 cup milk
3/4 cup dairy sour cream
1 7-oz can tuna, drained
2 tbsp. parsley

Sauté onions in margarine until tender, but not brown. Blend in flour. Add milk all at once. Cook quickly, stirring constantly, until mixture thickens and bubbles. Stir in sour cream, tuna and cheese. Heat through. Serve over bread, plain or toasted. Makes 4 servings.
