Hawaiian Tea Cookies

1 3/4 cups flour
3/4 tsp. salt
1/2 tsp. baking soda
1/2 cup butter or margarine, softened
1 cup sugar
1 egg
1 tbsp. lemon juice
2 tsp. vanilla
1 cup shredded coconut

In medium bowl combine flour, salt and baking soda; set aside. In large bowl cream butter and sugar until light and fluffy. Beat in egg., lemon juice and vanilla until well mixed. Stir in flour mixture, then coconut until blended. Shape dough in two 2-inch diameter rolls. Add optional decoration (Roll in colored sugar to decorate dough). Wrap tight; chill 4 hours or until firm. With sharp, thin knife, slice dough 1/4 inch thick. Place 1 inch apart on lightly greased baking sheet. Bake in preheated 375 degree oven 10 to 12 minutes or until slightly golden. Remove to rack to cool. Makes 36.
