Rice & Broccoli Casserole

1 cup uncooked rice
1 minced onion
1 small pkg. frozen, chopped broccoli
1 can cream of chicken soup
2 cups grated cheddar cheese

Cook rice, set aside. Cook onion in a small (3-4 tbsp.) amount of water, add broccoli and cook in covered saucepan until tender. In casserole, mix all ingredients together, using only 1/2 cup cheese. Sprinkle remainder of cheese on top and bake at 400 degrees 15-20 minutes until bubbly.
