cups sesame seeds (about 12 ounces)
1/2 cup honey
1/2 cup firmly packed light brown sugar
1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/4 tsp. salt
Heat
sesame seeds in a large skillet over medium heat until
lightly browned, stirring frequently. Remove to a bowl;
wipe skillet clean of seeds. Combine honey, sugar, ginger,
cinnamon and salt in same skillet. Heat to boiling over
medium heat, stirring constantly. Boil 2 minutes. Butter
or coat a 11x7-inch pan with vegetable cooking spray.
Stir seeds into syrup; pour into pan. Spread candy to
an even layer with buttered metal spatula.
Cool on wire rack 15 minutes. Lift out of pan to board.
Cut candy with a large knife into 4 lengthwise strips.
Cut each strip crosswise into thirteen 3/4-inch pieces.
When pieces are firm, wrap individually in plastic wrap
or store in single layer in airtight container.
