whole large chicken breasts, skinned and boned
2 tbsp. chopped green onion with tops
6 fully cooked smoked sausage links
1/2 cup butter, melted
1/4 cup white wine or dry sherry
1/4 cup snipped parsley
1/2 tsp. paprika
Cooking oil
Place
chicken breasts one at a time between two sheets of waxed
paper. Working out from center, pound to form 8x8-inch
cutlets. Remove paper; sprinkle each cutlet with a little
salt and 1 tsp. of the green onion. Place a sausage link
at the end of each cutlet. Tuck in sides; roll up as for
jelly roll. Press end to seal well; secure with wooden
picks. Blend next four ingredients. Coat grill with cooking
oil. Grill chicken, seam side down, over medium-hot coals
about 15 minutes., turning often and brushing with butter
mixture. Grill till done. 8 to 10 minutes more, turning
and brushing with butter mixture. Serves 6.
